Brisket Preparation

Cook the Brisket
In a slow cooker or oven, cook the brisket at a low temperature (around 225°F/107°C) for 6-8 hours until tender. If using an oven, wrap the brisket in foil to retain moisture. Once cooked, allow it to rest for 20 minutes before slicing into thin pieces.

Sauté the Onions
Slice the onion thinly. In a skillet over medium heat, add a tablespoon of butter and sauté the onions until they are caramelized and golden brown, about 10-15 minutes. Stir occasionally to prevent burning.

Make the Gravy
In a saucepan, melt the remaining tablespoon of butter over medium heat. Whisk in the flour until it forms a paste and cook for 1-2 minutes. Gradually whisk in the beef broth, ensuring no lumps form. Add salt, black pepper, and garlic powder. Simmer until thickened, about 5-7 minutes.

Grill the Sandwich
Butter one side of each slice of sourdough bread. On the unbuttered side, layer the sliced brisket, sautéed onions, and American cheese. Top with another slice of bread, buttered side out. Grill in a skillet over medium heat for 3-4 minutes on each side until golden brown and the cheese is melted.
