Preparation of Sausage

Prepare the Brisket
Trim excess fat from the beef brisket and cut it into small pieces. This will help it blend well with the sausage mixture.

Grind the Meats
Using a meat grinder, grind the brisket and beef fat together until finely minced. This should create a uniform texture.

Mix the Seasonings
In a large bowl, combine the ground brisket, beef fat, smoked paprika, garlic powder, onion powder, black pepper, and kosher salt. Mix well until the spices are evenly distributed.

Stuff the Sausages
Rinse the beef sausage casings in cold water. Using a sausage stuffer, fill the casings with the brisket mixture, twisting them into 6-inch links. Tie off the ends securely.

Chill the Sausages
Place the stuffed sausages in the refrigerator for at least 1 hour to firm up.

Assemble the Dogs
Place each sausage in a hot dog bun and top with the sautéed peppers and onions. Drizzle with additional barbecue sauce if desired.
