Cocktail

Method

Rim

  1. 1

    Prepare rim

Place brown sugar in a shallow dish. Stir the Amarena cherry syrup into the brown sugar until the sugar is slightly moistened and holds together in small clumps (this helps it adhere). Run a lime wedge around the outside rim of a highball or hurricane glass. Press the wet rim into the brown sugar mixture, turning to coat evenly. Set glass aside.

Sour Mix (house-made)

  1. 2

    Make sour mix

Combine fresh lime juice, fresh lemon juice, and simple syrup in a small jar or measuring cup. Stir or shake briefly to combine. This yields approximately the amount needed for one cocktail; scale as desired for batch-making.

Cocktail

  1. 3

    Build and shake

Fill a cocktail shaker with crushed ice. Add Goslings Black Seal Rum, coconut rum, house-made sour mix, pineapple juice, and cream of coconut. Secure the lid and shake vigorously for 10–15 seconds, until the outside of the shaker is very cold and slightly frosted.

  2. 4

    Serve

Fill the prepared brown-sugar-rimmed glass with fresh crushed ice. Double-strain (or pour) the shaken cocktail into the glass over the ice. Gently float the Amarena cherry on top and tuck the lime wedge on the rim or over the ice as garnish. Optionally, drizzle a teaspoon of Amarena cherry syrup over the top for added aroma and sweetness.

  3. 5

    Finish

If you prefer a layered 'storm' look, after pouring the cocktail, carefully pour an additional 0.25 oz Goslings Black Seal Rum over the back of a spoon so it sits briefly on the surface before sinking, creating a dark float. Serve with a straw and an optional swizzle stick.
