Method

Prepare Wings

    Trim and dry

    If wings are whole, separate into drumettes and flats by cutting at the joint. Pat wings thoroughly dry with paper towels — removing surface moisture helps them crisp.

    Place wings in a large bowl. Sprinkle with kosher salt and black pepper and toss to coat evenly.

Apply Rub and Rest

    In a small bowl, combine paprika, garlic powder, onion powder, brown sugar, cayenne, dried oregano, ground cumin, olive oil, and baking powder (if using). Mix into a paste.

    Pour the rub over the wings and toss thoroughly until every piece is evenly coated. For best flavor, cover and refrigerate 30 minutes to 4 hours. If short on time, you can cook immediately.

Cook Wings

    Preheat oven to 425°F (220°C). Arrange wings in a single layer on a wire rack set over a rimmed baking sheet (line the sheet with foil for easier cleaning). Leave small gaps between pieces for air circulation.

    Bake for 35–45 minutes, turning once at about 20–25 minutes, until skin is deep golden and crisp and internal temperature reaches 165°F (74°C). If you want extra crisp, broil 1–2 minutes at the end while watching carefully.

Make Honey-Chili Glaze

    While wings bake, combine honey, soy sauce, sriracha, rice vinegar, butter, and lime juice in a small saucepan over medium-low heat.

    Bring to a gentle simmer, stirring until butter melts and the sauce thickens slightly, about 3–4 minutes. Remove from heat and keep warm. Taste and adjust heat or acidity as desired.

Toss and Serve

    When wings are cooked, transfer them to a large warm bowl. Pour the warm honey-chili glaze over the wings and toss until evenly coated. Work quickly so glaze sticks to hot skin.

    Transfer wings to a serving platter. Sprinkle with chopped cilantro (or parsley) and toasted sesame seeds. Serve with lime wedges for squeezing and additional sauce on the side if desired.
