Prepare chops
Pat pork chops dry with paper towels. Trim any large pockets of fat if desired. Bring chops to room temperature for 20–30 minutes before cooking for even cooking.

Season
In a small bowl combine kosher salt, black pepper, garlic powder, and smoked paprika. Rub both sides of each pork chop with olive oil, then evenly season with the spice mix, pressing gently so the seasoning adheres.

Grill option
Preheat a gas grill or charcoal grill to medium-high (about 400–450°F / 200–230°C). Oil the grill grates lightly. Place chops on the hot grill and cook with lid closed for about 4–5 minutes per side for 1-inch thick chops, or until an instant-read thermometer inserted into the thickest part reads 145°F (63°C). Remove chops and let rest 5 minutes before serving.

Pan-fry option
Heat a heavy skillet (cast-iron preferred) over medium-high heat until hot. Add 1 tablespoon olive oil and 1 tablespoon butter. When the butter foams, add chops without crowding. Sear 3–4 minutes per side for 1-inch thick chops, reducing heat to medium if they brown too quickly. If chops are thick, finish in a 375°F (190°C) oven for 5–8 minutes until internal temperature reaches 145°F (63°C). Transfer to a plate and rest 5 minutes.

Finish
While resting, tent chops loosely with foil. Resting allows juices to redistribute and ensures a tender chop.

Prepare buns and condiments
If using buns, lightly toast them on the grill or in a skillet for 1–2 minutes cut-side down until golden. Spread about 1 teaspoon mayonnaise on the bottom half of each bun and 1/2 teaspoon mustard on the top half, if using.

Assemble sandwiches / serve plated
Place a lettuce leaf on the bottom bun (or plate), top with a rested pork chop, then add 2–3 tomato slices, a few rings of red onion, and pickles. Top with the bun lid if making a sandwich, or serve the chop on a plate with the vegetables arranged beside it.

Serve
Serve immediately after assembly while pork is warm. Offer extra salt, pepper, or condiments on the side.
