For the Brisket

    Trim and season

    Pat brisket dry with paper towels. Trim any excessively thick hard fat, leaving a thin fat cap (about 1/8–1/4 inch) to keep meat moist. In a small bowl combine kosher salt, coarse black pepper, garlic powder, onion powder and smoked paprika. Rub vegetable oil evenly over the brisket, then coat the entire surface with the dry rub, pressing to adhere. Let rest at room temperature 30 minutes or refrigerate up to overnight (if refrigerating, bring back to room temp 1 hour before cooking).

    Preheat a large heavy skillet or flat-top griddle over medium-high heat. Add 1–2 tablespoons neutral oil. When shimmering, sear the brisket fat-side down 3–5 minutes until browned, then briefly sear the edges and the other side 2–3 minutes. This step builds flavor but is optional for low-and-slow braising.

For Low-and-Slow Braise (or Oven Smoking)

    Prepare braising pan

    Preheat oven to 275°F (135°C). Place the halved onion and smashed garlic in the bottom of a heavy roasting pan or Dutch oven in a single layer to create a flavor bed. Pour in beef broth, apple cider vinegar, Worcestershire sauce and optional liquid smoke; stir gently to combine.

    Braise the brisket

    Set the seared (or seasoned) brisket on top of the onion/garlic bed, fat-side up. Cover tightly with a lid or foil (seal edges well). Roast in oven until fork-tender and an instant-read thermometer inserted into the thickest part reads 195–205°F (90–96°C), about 4 to 5 hours for a 4-lb brisket (time will vary by thickness). Check once around 3 hours: if liquid level is very low, add up to 1/2 cup more broth. When done, remove from oven and let rest, still covered, for 30–45 minutes to reabsorb juices.

For Chopping & Finishing

    Reserve juices and shred

    Carefully transfer brisket to a cutting board. Strain and reserve the braising liquid/drippings in a heatproof bowl; skim off excess fat if desired. Using two forks or meat claws, pull the brisket into bite-sized chopped pieces (roughly 1/2–3/4-inch). For a chopped texture rather than pulled, use a chef's knife to coarsely chop with quick rocking motions; discard any large hard connective pieces.

    Finish in pan

    Heat a large skillet over medium heat and add the butter. When melted, add 1 cup of the reserved braising liquid/drippings (or less for a dryer result) and bring to a simmer. Add the chopped brisket and toss to coat, cooking 3–5 minutes until edges are lightly caramelized and meat is heated through. Taste and adjust with salt, pepper, a teaspoon of pickle brine or apple cider vinegar for brightness, and optional hot sauce for a touch of heat. If mixture seems dry, add additional braising liquid a tablespoon at a time; for a saucier result, reduce extra liquid by simmering briefly.

    Finish and garnish

    Stir in chopped fresh parsley. Transfer the chopped brisket to serving plates or keep warm in a low oven (200°F / 95°C) until ready to serve.

To Serve (optional)

    Split and toast rolls, pile chopped brisket onto each roll, top with coleslaw and pickles if using. Serve extra braising liquid/drippings on the side for dipping.
