Spicy Margarita Mix

    Prepare jalapeño

    Slice the jalapeño in half lengthwise. Remove seeds and membranes if you want a milder heat; leave some or all for more heat. Reserve one thin slice for garnish and chop the rest roughly (about 2–3 tablespoons chopped).

    Combine ingredients

    In a small pitcher or jar, add 1 cup fresh lime juice, 1/4 cup fresh orange juice, 3 tablespoons agave nectar, 2 tablespoons Cointreau, and 1/2 teaspoon kosher salt.

    Infuse with jalapeño

    Add the chopped jalapeño to the liquid mixture. Stir well, then taste after 5 minutes. If you want more heat, let the mixture sit at room temperature up to 20–30 minutes, tasting every 5–10 minutes until desired spiciness is reached. For a very mild mix, remove jalapeño after 2–5 minutes.

    Strain and store

    Strain the mix through a fine-mesh sieve into a clean container to remove seeds and solids. Press solids lightly to extract flavor. Cover and refrigerate. The mix will keep 3–5 days chilled.

Cocktail Assembly

    Prepare the glass

    Rub a lime wedge around the rim of a rocks or coupe glass. Dip the rim into coarse salt or tajín on a shallow plate to coat. Fill the glass with fresh ice (or leave empty if serving up).

    Shake cocktail

    In a shaker, add 2 oz blanco tequila, 3 oz spicy margarita mix, and 1 cup ice. Shake vigorously for 10–15 seconds until well chilled.

    Strain and garnish

    Double-strain the cocktail into the prepared glass over fresh ice (if preferred). Garnish with a lime wheel on the rim and the reserved jalapeño slice on top of the drink or floated. Optionally add a small drizzle (1/4 tsp) of agave if you prefer it slightly sweeter.

    Serve immediately. Suggest serving with extra lime wedges and an extra jar of jalapeño slices for guests who want to up the heat.
