Method

Honey-Ginger Syrup

    Combine honey and water in a small saucepan. Stir over low heat until honey fully dissolves.

    Add the sliced fresh ginger and bring the mixture to a gentle simmer for 5 minutes to infuse flavor. Do not boil vigorously.

    Remove from heat and let the syrup steep with the ginger for 15–20 minutes, tasting occasionally until the ginger flavor is balanced to your preference.

    Strain out the ginger slices through a fine mesh sieve and transfer the syrup to a clean container. Refrigerate; syrup will keep for up to 2 weeks.

Cocktail Preparation

    Chill glass

    Place an old-fashioned glass in the freezer or fill it with ice water while you prepare the cocktail to chill it.

    Add 2 oz Buffalo Trace bourbon, 0.75 oz fresh lemon juice, 0.75 oz honey-ginger syrup, and 2 dashes Angostura bitters into a cocktail shaker.

    Fill the shaker with ice (about 1 cup) and shake vigorously for 12–15 seconds until well chilled and slightly diluted.

    Discard the ice/water from the chilled serving glass. Strain the cocktail over a large ice cube (or fresh ice) in the glass.

    Express a lemon twist over the drink to release oils, rub it on the rim if desired, and garnish with the twist or a lemon wheel.
