Preparation of Sashimi

Prepare the Tuna
Using a sharp knife, slice the yellowfin tuna into thin sashimi slices, about 1/4 inch thick.

Crust the Tuna
Sprinkle the sesame seeds on a plate. Gently press each slice of tuna into the sesame seeds to coat both sides.
Salad Assembly

Prepare the Salad Base
In a large bowl, combine the mixed baby greens and micro greens.

Arrange Sashimi
Place the sesame-crusted tuna slices artfully on top of the greens.
Make the Ginger Ponzu Dressing

Combine Dressing Ingredients
In a small bowl, whisk together the grated ginger, soy-free tamari, rice vinegar, lime juice, and maple syrup until well combined.

Drizzle Dressing
Drizzle the ginger ponzu dressing over the salad and tuna.
