Method
Preparing the Filet Mignon

Season the Steak
Take the filet mignon pieces and pat them dry with paper towels. Season both sides generously with salt and black pepper.

Sear the Steak
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the filet mignon to the skillet and sear for 3-4 minutes on each side for medium-rare, or until your desired doneness is reached.

Rest the Steak
Remove the filet mignon from the skillet and place it on a cutting board. Cover loosely with aluminum foil and let it rest for 5 minutes.
Cooking the Seasonal Vegetables

Prepare the Vegetables
While the steak is resting, wash and trim the asparagus, peel the carrots, and cut them into thin strips. Halve the cherry tomatoes.

Sauté the Vegetables
In the same skillet used for the steak, reduce the heat to medium and add the butter. Once melted, add the asparagus, carrots, and cherry tomatoes. Sauté for 5-7 minutes, or until the vegetables are tender but still crisp.

Plate the Dish
On each plate, place a piece of filet mignon and arrange a serving of sautéed vegetables beside it.

Sprinkle fresh parsley and lemon zest over the steak and vegetables for added flavor and presentation.
