Bread Preparation

    Activate Yeast

    In a small bowl, mix warm water with active dry yeast and let it sit for about 5-10 minutes until foamy.

    Mix Dry Ingredients

    In a large mixing bowl, combine millet flour, flaxseed meal, and salt.

    Combine Ingredients

    Once the yeast is activated, add it to the dry ingredients along with olive oil. Stir until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

    Shape the Baguette

    Punch down the risen dough, shape it into a baguette, and place it on a baking sheet lined with parchment paper.

    Second Rise

    Cover the shaped baguette with a cloth and let it rise again for about 30 minutes.

    Preheat Oven

    Preheat your oven to 400°F (200°C) during the second rise.

    Bake the Baguette

    Bake the baguette in the preheated oven for 25-30 minutes or until golden brown and crusty.

Roasting Garlic

    Prepare Garlic Bulbs

    Preheat the oven to 400°F (200°C). Cut the tops off the garlic bulbs to expose the cloves.

    Roast Garlic

    Drizzle olive oil over the exposed cloves, sprinkle with salt, wrap in aluminum foil, and roast for 30-35 minutes until soft.

    Make Garlic Spread

    Once cool, squeeze the roasted garlic cloves into a bowl and mash them with a fork until smooth. Add more olive oil if needed for consistency.

Assembly

    Spread Garlic Mixture

    Once the baguette is baked and cooled slightly, slice it open lengthwise. Spread the roasted garlic mixture generously on both sides.

    Add Cheese

    Sprinkle the pecorino romano cheese evenly over the garlic spread.

    Final Bake

    Return the assembled garlic bread to the oven and bake for an additional 10 minutes or until the cheese is melted and bubbly.
