Caramelized French Onion Soup (ve, V, C) Recipe

Soup Preparation

    Caramelize the Onions

    In a large pot, heat olive oil over medium heat. Add the sliced yellow onions and cook, stirring frequently, for about 20-25 minutes until they are deeply caramelized and golden brown.

    Deglaze the Pot

    Add the dry white wine to the pot to deglaze, scraping up any brown bits from the bottom. Let it simmer for 5 minutes.

    Add Broth and Herbs

    Pour in the vegetable broth, add fresh thyme, bay leaves, salt, and black pepper. Bring the soup to a simmer and let cook for 30 minutes.

    Strain the Soup

    After 30 minutes, remove the bay leaves and adjust seasoning if needed. Keep the soup warm over low heat.

Crostini Preparation

    Cook the Millet

    In a medium saucepan, bring 2 cups of water to a boil. Add the millet and salt, reduce heat to low, cover, and simmer for 15-20 minutes until the water is absorbed.

    Prepare the Crostini

    Preheat the oven to 375°F (190°C). Spread the cooked millet onto a baking sheet, drizzle with olive oil, and sprinkle with garlic powder. Bake for 15-20 minutes until golden and crispy.

Assembly

    Ladle the soup into bowls, top with crostini, and sprinkle with goat cheddar or vegan cheese.

    Finish with a sprinkle of fresh parsley and serve hot.
