Prepare the Ingredients
Chop the onion, green bell pepper, celery, and garlic. Slice the andouille sausage and cut the chicken breast into bite-sized pieces.
Add Garlic and Seasoning
Stir in the minced garlic and Cajun seasoning, cooking for an additional 1-2 minutes until fragrant.
Add Rice and Broth
Add the rice to the pot, stirring well to combine. Pour in the chicken broth and add bay leaves. Bring to a boil.
Simmer
Reduce the heat to low, cover the pot, and let simmer for about 20 minutes.
Add Shrimp
After 20 minutes, add the shrimp to the pot, stirring gently. Cover and cook for an additional 5-7 minutes, or until the shrimp are pink and cooked through.
Taste and Adjust
Remove bay leaves and taste the jambalaya. Adjust seasoning with salt and black pepper as needed.
Serve
Garnish with chopped green onions and serve hot.
