Prepare the Potatoes

Preheat your oven to 375°F (190°C). Wash and peel the russet potatoes. Slice them thinly, about 1/8 inch thick.

Make the Cream Mixture

In a saucepan, combine the heavy cream, minced garlic, salt, and black pepper. Heat over medium heat until it just starts to simmer, then remove from heat.

Layer the Potatoes

In a greased 9x13 inch baking dish, layer half of the sliced potatoes. Pour half of the cream mixture over the potatoes, then sprinkle with half of the cheddar cheese. Repeat with the remaining potatoes, cream mixture, and cheese.

Dot the top with butter and cover the dish with aluminum foil. Bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly.

Remove from the oven and let it cool for a few minutes. Sprinkle fresh chopped parsley on top before serving.
