Croquette Preparation

Prepare the Spinach
Wash the fresh spinach thoroughly and chop it finely.

Cook the Potatoes
Boil the medium potatoes in salted water until tender. Drain and let them cool, then peel and mash.

Sauté Onions and Garlic
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add chopped onion and minced garlic, and sauté until softened and translucent.

Combine Ingredients
In a large mixing bowl, combine the chopped spinach, mashed potatoes, sautéed onions and garlic, breadcrumbs, egg, salt, black pepper, and Parmesan cheese (if using). Mix until well combined.

Form the Croquettes
Shape the mixture into small oval or round croquettes, about 2 inches in diameter.

Fry the Croquettes
In a pan, heat the remaining tablespoon of olive oil over medium heat. Fry the croquettes in batches until golden brown on all sides, about 3-4 minutes per side. Drain on paper towels.

Prepare the Salad
In a large bowl, combine the mixed greens, halved cherry tomatoes, and sliced cucumber.

Make the Dressing
In a small bowl, whisk together olive oil, balsamic vinegar, salt, and black pepper.

Toss the Salad
Drizzle the dressing over the salad and toss gently to combine.
Assembly

Plate the Dish
On each plate, create a bed of mixed greens. Top with 3-4 spinach croquettes. Serve immediately.
