Pasta Preparation

Cook Fettuccine
Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente, usually about 3-4 minutes. Reserve 1 cup of pasta water, then drain the pasta.

Sear Shrimp
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the garlic (3 cloves, minced) and red pepper flakes. Sauté for about 30 seconds until fragrant. Add the shrimp, season with salt and black pepper, and cook for about 2-3 minutes on each side until pink and opaque. Remove from skillet and set aside.

Make Marinara Sauce
In the same skillet, add 2 tablespoons of olive oil and heat over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic (4 cloves) and cook for another minute. Pour in the canned whole tomatoes, crushing them with a spoon. Add fresh basil, salt, and black pepper. Simmer the sauce for about 15-20 minutes until thickened.
Combine and Serve

Combine Everything
Add the cooked fettuccine to the marinara sauce, tossing to combine. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached. Gently fold in the seared shrimp.

Plate and Garnish
Serve the fettuccine con gamberi pomodoro on warm plates. Top with grated pecorino cheese and fresh basil leaves. Enjoy your meal!
