Method
Preparation
- 1
Prep the Pork
Begin by scoring the skin of the pork belly in a crosshatch pattern, ensuring not to cut into the meat. This will help the skin become crispy during cooking.
- 2
- 3
Season the Meat
Rub the mixture thoroughly over the pork belly and pork shoulder, making sure to get it into the scored skin and all over the meat. Drizzle with olive oil and massage it in.
Cooking
- 4
Prepare the Cooking Liquid
In a large slow cooker, combine the chicken broth and apple cider vinegar. Stir well.
- 5
Add the Pork
Place the seasoned pork belly and shoulder into the slow cooker, skin-side up, ensuring they are submerged in the cooking liquid.
- 6
Cook the Pork
Cover the slow cooker and set it to low. Cook for 8-10 hours, or until the pork is tender and easily pulls apart with a fork.
- 7
Crisp the Skin
Once cooked, preheat your oven to 475°F (245°C). Carefully remove the pork from the slow cooker and place it on a baking sheet.
- 8
Finish in the Oven
Roast the pork in the oven for 15-20 minutes, or until the skin is crispy and golden brown. Keep an eye on it to prevent burning.
