Pasta Preparation

Boil Water
In a large pot, bring water to a rolling boil. Add 1 tablespoon of salt.

Cook Spaghetti
Add 400 grams of spaghetti to the boiling water and cook according to package instructions until al dente, usually around 8-10 minutes.

Reserve Pasta Water
Before draining the spaghetti, reserve 1 cup of the pasta cooking water and set aside.

Drain Pasta
Drain the spaghetti and return it to the pot off the heat.
Sauce Preparation

Cook Pancetta
In a large skillet over medium heat, cook 150 grams of pancetta until crispy, about 4-5 minutes. Remove from heat.

Mix Eggs and Cheese
In a bowl, whisk together 4 large eggs and 100 grams of grated Parmesan cheese until well combined.

Combine with Pasta
Quickly add the egg and cheese mixture to the hot pasta, tossing continuously to create a creamy sauce. If the mixture is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Add 1 teaspoon of black pepper and stir to combine.
Garnishing and Serving

Serve
Portion the pasta into bowls, garnish with fresh parsley, and serve immediately with extra Parmesan cheese on the side if desired.
