Preparation of Gelato Base

Heat the Milk and Cream
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is hot but not boiling, stirring occasionally.

Whisk Egg Yolks and Sugar
In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and creamy.

Cook the Base
Cook over medium heat, stirring constantly until the mixture thickens and coats the back of a spoon (about 5-7 minutes). Do not let it boil.

Remove the saucepan from the heat. Stir in the vanilla extract and a pinch of salt. If you're adding chocolate, fruit puree, or Nutella, mix it in at this stage.

Transfer the mixture to a bowl and let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
