Prepare the Ribs

    Season the Ribs

    Preheat your oven to 150°C (300°F). Rinse the pork ribs under cold water and pat them dry with paper towels. In a small bowl, mix salt, black pepper, garlic powder, and paprika. Rub this spice mixture generously all over the ribs.

    Bake the Ribs

    Place the seasoned ribs on a baking sheet lined with aluminum foil. Cover the ribs with another piece of foil and bake in the preheated oven for 2.5 to 3 hours, until the meat is tender and pulls away from the bone.

    Add Barbecue Sauce

    Remove the ribs from the oven and discard the top layer of foil. Brush the barbecue sauce all over the ribs. Increase the oven temperature to 200°C (400°F) and return the ribs to the oven for an additional 20-30 minutes, until the sauce caramelizes.

    Cut and Season the Potatoes

    Peel the potatoes and cut them into thin strips. In a large bowl, toss the potato strips with olive oil, salt, black pepper, and garlic powder until evenly coated.

    Bake the Fries

    Spread the potato strips in a single layer on a baking sheet lined with parchment paper. Bake in the oven at 200°C (400°F) for 25-30 minutes, flipping halfway through, until golden brown and crispy.
