Prepare the Shrimp

Start by thoroughly rinsing the jumbo shrimp under cold water. Pat them dry with paper towels and set aside.

Mix the Batter

In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Whisk to combine evenly.

Add Water

Gradually add the cold water to the dry mixture, whisking continuously until you achieve a smooth batter with no lumps.

Coat the Shrimp

Dip each shrimp in the batter, ensuring it is fully coated. Then roll it in the panko breadcrumbs, pressing gently to adhere.

Heat the Oil

In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small amount of batter into it; if it sizzles, the oil is hot enough.

Fry the Shrimp

Carefully place the coated shrimp into the hot oil, making sure not to overcrowd the pan. Fry them for about 2-3 minutes on each side, or until they turn golden brown and crispy.

Once fried, remove the shrimp from the oil and place them on a paper towel-lined plate to drain excess oil. Serve immediately with your favorite dipping sauce.
