Method

Steak Preparation

  1. 1

    Season the Steak

Pat the New York Strip steak dry with paper towels. Rub both sides with olive oil, then season generously with salt, black pepper, and garlic powder.

  2. 2

    Prepare to Cook

Let the seasoned steak sit at room temperature for about 30 minutes to allow the flavors to penetrate and for even cooking.

  3. 3

    Heat the Pan

Heat a cast-iron skillet or heavy-bottomed pan over medium-high heat until hot. Add a tablespoon of olive oil and let it heat until shimmering.

  4. 4

    Cook the Steak

Place the steak in the hot skillet and sear for 4-5 minutes without moving it. Flip the steak and cook for another 4-5 minutes for medium-rare, or until it reaches your desired doneness.

  5. 5

    Add Rosemary

During the last minute of cooking, add fresh rosemary to the skillet. Optionally, baste the steak with the oil and juices in the pan.

  6. 6

    Rest the Steak

Remove the steak from the skillet and let it rest on a cutting board for at least 5 minutes before slicing.

Asparagus Preparation

  1. 7

    Prepare the Asparagus

While the steak is resting, rinse the asparagus under cold water and trim the tough ends.

  2. 8

    Season the Asparagus

In a mixing bowl, toss the asparagus with olive oil, salt, and black pepper until evenly coated.

  3. 9

    Cook the Asparagus

In the same skillet used for the steak, add the seasoned asparagus and cook over medium heat for about 5-7 minutes, turning occasionally, until tender and slightly charred.
