    Prepare the Portabella Mushrooms

    Clean the portabella mushrooms with a damp cloth. Remove the stems and lightly brush the caps with olive oil on both sides. Sprinkle salt and black pepper on the caps.

    Grill the Mushrooms

    Preheat a grill or grill pan over medium-high heat. Place the portabella mushrooms on the grill and cook for about 5-7 minutes on each side, or until tender and grill marks appear.

    Melt the Mozzarella

    While the mushrooms are grilling, slice the fresh mozzarella into thick slices. Once the mushrooms are done, place a slice of mozzarella on top of each mushroom cap and close the grill lid. Allow the cheese to melt for about 2-3 minutes.

    Assemble the Dish

    Remove the portabella mushrooms from the grill. Top each mushroom with a generous spoonful of housemade tomato jam and garnish with fresh basil.

    Serve immediately as an appetizer or a main dish. Enjoy!
