    Prepare the Pork Belly

    Preheat your oven to 300°F (150°C). Score the skin of the pork belly in a crosshatch pattern, then rub the salt, black pepper, and garlic powder all over it. Place it in a roasting pan and cook for about 2.5 hours, or until tender.

    Crisp the Pork Belly

    Increase the oven temperature to 450°F (230°C) and roast for an additional 30 minutes, or until the skin is crispy. Remove from oven and let it rest for 10 minutes before slicing.

    Prepare the Banh Mi

    Slice the baguette in half lengthwise. Spread a generous amount of sriracha mayo inside the baguette. Layer the kale mix, sliced jalapenos, cucumber, pickled radish, and cilantro.

    Assemble

    Add the sliced crispy pork belly on top of the vegetables and close the baguette. Slice into portions and serve immediately.
