    Prepare the Ingredients

    Chop all vegetables and cube the beef, ensuring they are ready for cooking.

    Brown the Beef

    In a large pot, heat the olive oil over medium-high heat. Add the cubed beef and brown on all sides. Remove from the pot and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion and garlic. Sauté until the onions are translucent, about 5 minutes.

    Add Spices and Broth

    Stir in the paprika, salt, black pepper, and bay leaves. Then add the beef broth and bring to a simmer.

    Combine Ingredients

    Return the browned beef to the pot, along with the diced potatoes and sliced carrots. Stir to combine.

    Simmer

    Cover the pot and let the goulash simmer on low heat for about 1.5 hours, or until the beef is tender and the potatoes are cooked through.

    Remove bay leaves before serving. Ladle the goulash into bowls and serve hot with fresh baked rye bread and pepperoncinis on the side.
