Prepare the Dough
In a large bowl, dissolve the yeast and brown sugar in warm water. Let it sit for about 5 minutes until bubbly. Add the flour and salt, mixing until a dough forms.

Preheat the Oven
Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.

Shape the Pretzel Bites
Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope, then cut each rope into 1-inch pieces to form bites.

Prepare the Baking Soda Bath
In a large pot, bring about 10 cups of water to a boil. Add the baking soda carefully (it will bubble up).

Boil the Pretzel Bites
Drop the pretzel bites into the boiling baking soda bath, cooking for 30 seconds, then remove with a slotted spoon and place on the prepared baking sheet.

Let cool slightly before serving warm with your choice of mustard or beer cheese.
