Roasted Herb Chicken (if selected)
Preheat oven to 325°F (165°C). Season 4 lbs of boneless chicken with salt, pepper, 2 tbsp olive oil, 2 tsp dried thyme and 2 tsp dried rosemary. Roast on a tray covered with foil for 45–60 minutes until internal temperature reaches 165°F (74°C). Let rest 10 minutes, carve or slice into serving pieces, keep warm in chafing dish at 140°F (60°C).

Honey-Glazed Ham (if selected)
Preheat oven to 275°F (135°C). Place 4 lbs sliced ham in a foil-lined pan. Brush with glaze made from 1 cup honey, 2 tbsp Dijon mustard and 1 tbsp apple cider vinegar. Cover and warm for 30–45 minutes until heated through. Uncover and baste once more. Hold covered in warm serving pan at 140°F (60°C).

Slow-Roasted Beef Brisket (if selected)
Season 6 lbs brisket with 3 tbsp kosher salt, 2 tbsp black pepper, 2 tbsp smoked paprika and 2 tbsp garlic powder. Sear all sides in a hot pan 3–4 minutes per side. Transfer to oven at 275°F (135°C) with 2 cups beef stock, cover and cook 4–6 hours until fork-tender and internal temp ~195°F (90°C). Slice against the grain and keep warm in au jus at 140°F (60°C).

Pulled Pork (if selected)
Rub 5 lbs pork shoulder with 3 tbsp kosher salt, 2 tbsp brown sugar, 2 tsp black pepper and 2 tsp smoked paprika. Cook in a slow cooker with 1 cup apple cider for 8 hours on low or roast at 300°F (150°C) for 5–6 hours until falling apart. Shred, toss with 2 cups barbecue sauce, and hold warm in covered pan at 140°F (60°C).

Garlic Mashed Potatoes
Peel and cut 3 lbs Yukon Gold potatoes into uniform pieces. Boil in salted water until fork-tender (15–20 minutes). Drain and return to pot. Mash with 1 cup warm heavy cream, 6 tbsp butter, 3 cloves minced garlic (simmered briefly in 1 tbsp butter) and salt & pepper to taste. Keep in insulated container or chafing dish; stir occasionally and top with 1 tbsp chopped parsley before service.

Seasonal Roasted Vegetables
Toss 8 cups mixed vegetables (carrots, zucchini, bell peppers) with 3 tbsp olive oil, 1 tsp salt, 1/2 tsp pepper and 1 tsp dried oregano. Roast on sheet pans at 425°F (220°C) for 20–25 minutes, stirring once, until caramelized. Finish with 1 tbsp butter and 1 tbsp chopped parsley. Hold in covered warm pan.

Baked Macaroni and Cheese
Cook 1 lb elbow macaroni until just shy of al dente. Make cheese sauce by melting 6 tbsp butter, whisking in 6 tbsp flour for 2 minutes, slowly adding 4 cups whole milk until thickened, then stirring in 4 cups shredded cheddar and 1 cup grated Parmesan until smooth. Combine pasta and sauce, transfer to baking dish, top with 1 cup breadcrumbs mixed with 2 tbsp melted butter. Bake at 375°F (190°C) for 20–25 minutes until bubbly and golden. Portion into warm pan for buffet.

Classic Green Salad
Combine 8 cups mixed lettuce, 1 cup sliced cucumbers and 1 cup halved cherry tomatoes in large bowls. Keep dressings (ranch and vinaigrette) on the side in squeeze bottles. Toss just before serving. Garnish with 2 tbsp chopped parsley.

Herbed Rice Pilaf
Sauté 2 cups long-grain rice in 2 tbsp butter with 1 small diced onion until translucent. Add 4 cups low-sodium chicken stock, 1 tsp salt and 1/2 tsp pepper. Simmer covered for 18 minutes off heat; fluff and stir in 2 tbsp chopped parsley and 1 tbsp lemon zest. Keep warm.

Arrange hot items (meats and hot sides) in chafing dishes kept at 140°F (60°C). Place breads and cold items (salad, dressings, condiments) on separate tables to avoid cross-contamination. Provide serving utensils for each item. Keep gravy and sauces in insulated servers; label each item with name and common allergens (dairy, gluten, nuts). Garnish hot sides and meats with chopped parsley. Replenish trays as needed to maintain freshness.

Portions: For a staffed buffet serving approximately 50 guests, use the quantities listed. Staff should monitor levels and refill with additional prepared pans as needed. Provide plates, napkins, cutlery and trash receptacles nearby. Maintain food safety: keep hot foods ≥140°F and cold foods ≤40°F; discard any perishable item held outside safe range for over 2 hours.
