Method

    Preheat a gas or charcoal grill to medium-high heat (about 400°F / 200°C). If using a stovetop grill pan, heat it over medium-high. Lightly brush each hot link with the vegetable oil to help prevent sticking.

    Place the hot links on the grill perpendicular to the grates. Grill for 4–5 minutes per side, turning occasionally, until the casings are nicely browned and the internal temperature reaches 160°F (71°C) for pork/beef or follow package instructions. Avoid overcooking to keep links juicy.

    Remove the hot links from the grill. Using a sharp knife, make a lengthwise cut down the center of each link, slicing almost but not completely through so they can open like a book (this helps them heat through and get a bit more char inside). Return them to the grill, cut-side down, for 30–60 seconds to get light char and warm the interior.

    While the links rest for a minute, place the split buns cut-side down on the grill for 20–30 seconds until lightly toasted and marked. Watch closely to prevent burning.

    While the sausages cook, separate and rinse the lettuce leaves, spin or pat dry. Thinly slice the onion into rings and season lightly with 1/4 tsp kosher salt and a pinch of black pepper to mellow and bring out sweetness. If using, warm the pickled jalapeños slightly on the grill for 10–15 seconds.

    Spread about 1 tablespoon (1 tbs) of mayonnaise evenly on the bottom half of each toasted bun (total ~4 tbs used). If you prefer mustard, spread ~1/2 tablespoon of yellow mustard on the top halves (total ~2 tbs used). Place a lettuce leaf or two on the mayo, then set the split hot link in each bun. Top with 3–4 onion rings per sandwich and, if desired, a teaspoon or so of pickled jalapeños. Add remaining mayonnaise to taste if desired.

    Serve the hot link sandwiches immediately while hot. Pass extra mayonnaise, mustard, or hot sauce at the table. Makes 4 sandwiches.
