For the Apple Crisp

Prepare the Apples
Preheat the oven to 350°F (175°C). In a large bowl, toss the sliced apples with granulated sugar, brown sugar, and 1 tsp cinnamon. Transfer to a greased 9x13 inch baking dish.

Make the Crisp Topping
In another bowl, combine flour, oats, brown sugar, the remaining cinnamon, and melted butter. Mix until crumbly. Spread the topping evenly over the apples.

Bake
Bake in the preheated oven for about 45-50 minutes, or until the apples are bubbly and the topping is golden brown.
For the Sweet Almond Hollandaise

Prepare the Sauce
In a heatproof bowl, whisk together egg yolks and almond milk until thick and lemon-colored. Place over a pot of simmering water, ensuring the bowl does not touch the water.

Add Butter
Gradually whisk in melted butter, almond extract, and lemon juice. Continue whisking until the sauce thickens, about 5-7 minutes. Season with salt to taste.

Drizzle the sweet almond hollandaise over the warm apple crisp and serve immediately.
