Instructions
Melt the Chocolate
In a heatproof bowl, melt the dark chocolate over a pot of simmering water. Stir until smooth, then remove from heat and let it cool slightly.
Whip the Cream
In a large mixing bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip.
Prepare the Egg Mixture
In another bowl, whisk the eggs, granulated sugar, and a pinch of salt until pale and frothy. This should take about 3-5 minutes.
Combine Ingredients
Gently fold the melted chocolate into the egg mixture. Then, fold in the whipped cream and vanilla extract until fully combined. Be careful not to deflate the mixture.
Chill the Mousse
Spoon the mousse into individual serving dishes or a large bowl. Refrigerate for at least 2 hours, or until set.
Serve
Serve chilled, optionally garnished with whipped cream or chocolate shavings.
