Prepare the Cutlets
If using pork or chicken breasts, place them between two pieces of plastic wrap and pound them to about 1/4 inch thickness.

Season the Cutlets
Season both sides of the cutlets with salt and black pepper.

Set Up Breading Station
Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.

Bread the Cutlets
Dredge each cutlet first in flour, shaking off the excess, then dip in the egg, and finally coat with breadcrumbs. Press the breadcrumbs onto the cutlet to ensure they stick.

In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the breaded cutlets, cooking for about 3-4 minutes on each side until golden brown and cooked through.
