Preparing the Pretzels

Prepare the Dough
In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until foamy. Add the flour and salt, and mix until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5 minutes until smooth. Place in a greased bowl, cover with a cloth, and let it rise in a warm place for 1 hour.

Shape the Pretzels
Preheat the oven to 450°F (232°C). After the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope and shape into a pretzel.

Boil the Pretzels
In a large pot, bring 10 cups of water and the baking soda to a boil. Carefully drop each pretzel into the water for about 30 seconds, then remove and place on a baking sheet lined with parchment paper.

Let the pretzels cool slightly before serving. Enjoy with cheese sauce or mustard for dipping.
