Prepare the Potatoes

Wash the potatoes and place them in a large pot. Cover with cold water, add a pinch of salt, and bring to a boil. Cook until tender, about 15-20 minutes. Drain and let cool slightly, then cut into bite-sized pieces.

Cook the Bacon

In a large skillet, cook the bacon over medium heat until crispy. Remove from the skillet and place on paper towels to drain. Reserve about 2 tablespoons of the bacon fat in the skillet.

Sauté the Onion

In the same skillet with the reserved bacon fat, add the chopped onion. Sauté until translucent, about 5 minutes.

Make the Dressing

In a bowl, whisk together the apple cider vinegar, Dijon mustard, sugar, salt, and black pepper. Add the dressing to the skillet with the sautéed onions and heat until warm.

Combine Ingredients

Add the cooked potatoes to the skillet and gently toss to coat with the dressing. Crumble the crispy bacon and fold it into the salad.

Transfer the salad to a serving dish, garnish with chopped parsley, and serve warm.
