Method

Preparing the Ham

    Glaze the Ham

    Preheat your oven to 325°F (165°C). Place the Smithfield ham in a roasting pan. In a saucepan, combine brandy, pineapple juice, and brown sugar over medium heat. Stir until the sugar is dissolved. Pour the mixture over the ham, covering it evenly.

    Roast the Ham

    Cover the ham with foil and bake for about 15 minutes per pound. Remove the foil for the last 30 minutes to allow the glaze to caramelize.

Preparing the Sweet Potatoes

    Cook the Sweet Potatoes

    Peel and dice the sweet potatoes into cubes. Boil them in salted water until tender, about 15-20 minutes. Drain and set aside.

    Mash the Sweet Potatoes

    In a bowl, mash the cooked sweet potatoes with butter, salt, and pepper to taste.

Preparing the Green Beans Amandine

    Cook the Green Beans

    Trim the ends of the green beans and blanch them in boiling water for 3-5 minutes until bright green and tender-crisp. Drain and immediately transfer to an ice bath to stop cooking.

    Sauté the Green Beans

    In a skillet, melt butter over medium heat, add the sliced almonds, and toast them lightly. Add the green beans and sauté for about 5 minutes, seasoning with salt and pepper.
