Prepare and Season the Rib

Preheat the oven to 450°F (232°C). Rub the prime rib roast with olive oil, then season generously with salt, black pepper, garlic powder, and thyme. Place the roast bone-side down in a roasting pan.

Roasting

Roast the prime rib in the preheated oven for 20 minutes to develop a crust, then reduce the temperature to 325°F (163°C) and continue roasting for about 1.5 hours or until the internal temperature reaches 130°F (54°C) for medium-rare.

Resting

Remove the roast from the oven and let it rest for 20-30 minutes before slicing.

Prepare the Potatoes

Peel and slice the russet potatoes into rounds. Boil them in salted water until tender, about 15-20 minutes.

Mash and Combine

Drain the potatoes and return them to the pot. Add heavy cream, butter, cheddar cheese, salt, and black pepper. Mash until smooth and creamy.

Au Jus

Make the Au Jus

In a saucepan, combine beef broth and Worcestershire sauce. Bring to a simmer and season with salt and black pepper to taste. Allow to simmer for 10 minutes.
