Prepare the Eggs
In a large pan or wok, heat 1 tablespoon of vegetable oil over medium heat. Scramble the eggs until fully cooked, then remove from the pan and set aside.

Cook the Vegetables
In the same pan, add the remaining tablespoon of oil. Add the diced carrots and peas, cooking for about 3-4 minutes until they soften.

Combine Ingredients
Add the cooked rice to the pan, along with the scrambled eggs, green onions, soy sauce, salt, and black pepper. Stir-fry for another 5-7 minutes, ensuring everything is heated through.

Cook the Noodles
Boil the chow mein noodles according to package instructions. Drain and set aside.

Combine Noodles and Sauce
Add the cooked noodles and soy sauce to the pan, along with the bean sprouts. Stir-fry for an additional 3-5 minutes until everything is well combined and heated through.
Egg Rolls

Prepare the Filling
In a bowl, mix together the shredded cabbage, shredded carrots, chopped green onions, and soy sauce.

Roll the Egg Rolls
Place about 2 tablespoons of the filling in the center of each egg roll wrapper. Fold the sides over and roll tightly, sealing the edge with a small amount of water.
