    Preheat and prep

    Preheat your waffle iron according to manufacturer instructions. Lightly grease the grids with a small amount of melted butter or nonstick spray so waffles release easily.

    In a large mixing bowl, whisk together 2 cups all-purpose flour, 2 tablespoons granulated sugar, 1 tablespoon baking powder, and 1 teaspoon fine salt until evenly combined.

    Wet ingredients

    In a separate bowl or large measuring cup, whisk the 2 large eggs until blended. Add 1 1/2 cups whole milk, 6 tablespoons melted and cooled unsalted butter, and 1 teaspoon vanilla extract. Whisk until smooth.

    Combine batter

    Make a well in the dry ingredients and pour the wet mixture into it. Gently fold with a spatula or whisk just until combined and no large streaks of flour remain. The batter should be slightly thick but pourable; if too thick, thin with up to 2 tablespoons additional milk.

    Let the batter rest for 5–10 minutes at room temperature to allow the baking powder to activate and to yield lighter waffles.

    Cook waffles

    Working with a hot waffle iron, pour the recommended amount of batter for your appliance (typically 1/2 to 3/4 cup for a standard waffle iron) onto the center of the grids. Close and cook until golden brown and crisp, about 3–5 minutes depending on your iron. Repeat with remaining batter, re-greasing the iron as needed. Transfer finished waffles to a wire rack in a low oven (about 200°F / 95°C) to keep warm and crisp while you finish the batch.

    Make honey butter

    While waffles cook (or ahead of time), place 4 tablespoons softened unsalted butter in a small bowl. Add 3 tablespoons honey and a pinch of fine salt. Using a fork or small whisk, beat until light, smooth and fully combined. Taste and adjust salt or honey to preference. If using lemon zest, fold in 1/2 teaspoon zest for brightness.

    Soften for serving

    If the honey butter becomes too firm in the fridge, let it sit at room temperature 10–15 minutes so it spreads easily on hot waffles.

To Serve

    Stack warm waffles on plates. Dollop or spread about 1 tablespoon honey butter per waffle (adjust to taste) so it slightly melts into the waffle pockets. Drizzle with maple syrup if desired and top with fresh berries. Dust lightly with powdered sugar if using.
