Method

Preparation

  1. 1

    Prepare the Marinade (Optional)

In a small bowl, mix together the soy sauce, mirin, grated ginger, and minced garlic until well combined. This will be used to marinate the yellowtail collar for added flavor.

  2. 2

    Marinate the Yellowtail Collar (Optional)

If using the marinade, place the yellowtail collar in a shallow dish or a resealable plastic bag and pour the marinade over it. Seal and refrigerate for at least 30 minutes or up to 2 hours to allow the flavors to infuse.

  3. 3

    Prepare the Grill or Oven

Preheat your grill to medium-high heat or preheat your oven to 400°F (200°C).

  4. 4

    Season the Yellowtail Collar

Remove the yellowtail collar from the marinade (if used) and pat dry with paper towels. Drizzle with olive oil and season both sides with sea salt and black pepper.

Cooking

  1. 5

    Grill the Yellowtail Collar

Place the seasoned yellowtail collar on the grill and cook for about 5-7 minutes on each side, or until the flesh is opaque and flakes easily with a fork.

  2. 6

    Oven Method (if not grilling)

If using the oven, place the yellowtail collar on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until cooked through and the skin is crispy.

  3. 7

    Serve

Remove the yellowtail collar from the grill or oven, and squeeze fresh lemon juice over the top. Garnish with fresh herbs and serve immediately with additional lemon wedges on the side.
