    Prepare Marinade

    In a medium-sized bowl, combine soy sauce, mirin, sake, brown sugar, minced garlic, and grated ginger. Whisk until the sugar is fully dissolved.

    Marinate Chicken

    Cut the chicken thighs into bite-sized pieces. Place them in a zip-top bag or a shallow dish and pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Skewering and Cooking

    Prepare Skewers

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. If using metal skewers, they can be used directly.

    Assemble Skewers

    Thread the marinated chicken pieces onto the skewers, alternating with pieces of green onion. Leave a little space between each piece for even cooking.

    Grill the Skewers

    Preheat your grill or grill pan over medium-high heat. Once hot, place the skewers on the grill and cook for about 3-4 minutes per side, basting with leftover marinade, until the chicken is cooked through and has nice grill marks.
