Preparing Sushi Rice

    Rinse the Rice

    In a fine mesh sieve, rinse the sushi rice under cold water until the water runs clear. This helps remove excess starch.

    Cook the Rice

    In a rice cooker or pot, combine the rinsed sushi rice and 2.5 cups of water. Cook according to the rice cooker instructions or bring to a boil on the stove, then reduce to low heat, cover, and simmer for 20 minutes.

    Season the Rice

    Once cooked, transfer the rice to a large bowl. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the rice using a spatula, being careful not to mash the grains.

Preparing Fillings

    Slice Vegetables

    Julienne the cucumber, carrot, and red bell pepper into thin strips. Halve and remove the pit from the avocado, then slice it into thin strips.

    Prepare Spinach

    Blanch the spinach in boiling water for 30 seconds, then immediately transfer it to an ice bath to stop the cooking process. Drain and squeeze out excess water.

Rolling the Maki

    Prepare the Rolling Mat

    Lay a bamboo sushi mat on a clean surface and place a sheet of nori on top, shiny side down.

    Add the Rice

    With wet hands, spread a thin layer of sushi rice over the nori, leaving about 1 inch of space at the top edge.

    Arrange a small amount of each vegetable filling horizontally across the center of the rice-covered nori.

    Roll the Maki

    Using the bamboo mat, lift the edge closest to you and start rolling away from you, tucking the fillings tightly. Continue rolling until you reach the exposed edge of the nori.

    Dampen the edge of the nori with a little water to seal the roll. Press gently to secure.

    Using a sharp knife, slice the roll into 6-8 pieces, wiping the knife with a damp cloth between cuts to keep the edges clean.

    Arrange the sliced maki on a platter. Serve with soy sauce, wasabi, and pickled ginger on the side.
