Preparing the Broth

    Combine Base Ingredients

    In a large pot, combine 4 cups of water, 2 cups of vegetable broth, 3 tablespoons of soy sauce, 2 tablespoons of miso paste, minced garlic, grated ginger, and sesame oil.

    Bring to a Simmer

    Heat the mixture over medium-high heat until it begins to simmer, stirring occasionally to dissolve the miso paste.

    Reduce Heat

    Once simmering, reduce the heat to low and let the broth simmer gently while you prepare the noodles and vegetables.

Cooking the Noodles and Vegetables

    Cook Ramen Noodles

    In a separate pot, bring water to a boil and cook the ramen noodles according to package instructions. Drain and set aside.

    In the same pot used for the noodles, add the cubed tofu and sauté for about 5 minutes until lightly browned. Then add the sliced mushrooms, julienned carrot, and chopped bok choy, cooking until the vegetables are tender, about 3-4 minutes.
