Start by selecting a high-quality fresh tuna steak. Rinse it under cold water and pat it dry with paper towels.

Marinate the Tuna
In a small bowl, mix together the soy sauce, sesame oil, rice vinegar, and mirin. Place the tuna steak in a shallow dish and pour the marinade over it. Let it marinate for about 15 minutes, turning occasionally.
