Prepare the Noodles

Cook the Udon Noodles
Bring 1 liter of water to a boil in a pot. Add 200 grams of udon noodles and cook according to package instructions, usually around 8-10 minutes.

Drain and Rinse
Once cooked, drain the noodles in a colander and rinse them under cold water to stop the cooking process. Set aside.
Prepare the Tempura Batter

Mix the Batter
In a mixing bowl, combine 100 grams of all-purpose flour and 50 grams of cornstarch. In a separate bowl, whisk together 150 ml of ice-cold water and 1 egg yolk. Pour the wet ingredients into the dry ingredients and stir until just combined (lumps are okay).

Peel and slice the carrot, zucchini, and sweet potato into thin strips (about 1/4 inch thick) to ensure quick cooking.
Fry the Tempura

Heat Oil
In a deep frying pan or wok, heat oil (about 2 inches deep) to 180°C (350°F).

Dip and Fry Vegetables
Dip the prepared vegetable strips into the tempura batter, allowing excess batter to drip off. Carefully place them into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, approximately 2-3 minutes. Remove with a slotted spoon and drain on paper towels.

Chop the green onions and add them to the simmering broth. Allow to cook for an additional 2-3 minutes.

Divide the cooked udon noodles into serving bowls. Ladle the hot broth over the noodles.

Arrange the fried tempura vegetables on top of the noodles in the broth.
