Accompaniments

Method

Prepare Sushi Rice

  1. 1

    Rinse the Rice

Place the sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear to remove excess starch.

  2. 2

    Cook the Rice

In a medium saucepan, combine the rinsed sushi rice and 2.5 cups of water. Bring to a boil over medium-high heat, then reduce heat to low and cover. Cook for 18-20 minutes until the rice is tender and water is absorbed.

  3. 3

    Season the Rice

In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, remove it from heat and let it sit covered for 10 minutes. Transfer the rice to a large bowl and gently fold in the vinegar mixture. Allow it to cool to room temperature.

Prepare Sashimi

  1. 4

    Slice the Fish

Using a very sharp knife, slice the fresh salmon, tuna, and yellowtail fillets against the grain into thin pieces, approximately 1/4 inch thick.

  2. 5

    Plate the Sashimi

Arrange the sliced sashimi on a chilled plate in an aesthetically pleasing manner, alternating the types of fish.

Serve

  1. 6

    Prepare the Accompaniments

In small bowls, serve soy sauce, a dollop of wasabi, and pickled ginger for dipping and palate cleansing.

  2. 7

    Plate the Sushi Rice

Scoop a portion of sushi rice onto the plate next to the sashimi, creating a nice balance.

  3. 8

    Enjoy

Serve the sushi sashimi combination immediately while fresh, and enjoy with the accompaniments.
