Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear, about 2-3 minutes.

    Cook the Rice

    Combine the rinsed rice and water in a rice cooker. Cook according to the rice cooker's instructions.

    Season the Rice

    Once the rice is done, transfer it to a large bowl. In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Pour this mixture over the warm rice and gently fold to combine. Allow to cool to room temperature.

Prepare Fillings

    Cut the Vegetables

    Julienne the cucumber and carrot into thin strips. Cut the avocado into slices.

    Prepare Smoked Salmon

    If using whole smoked salmon, slice it into strips or small pieces.

Assemble Sushi

    Lay a bamboo sushi mat on a clean surface. Place a sheet of nori on the mat, shiny side down.

    Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

    Place a few strips of cucumber, carrot, avocado, and smoked salmon in a line across the center of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, pressing gently to form a tight roll. Seal the edge of the nori with a little water.

    Slice and Serve

    Using a sharp knife, slice the roll into bite-sized pieces. Serve with soy sauce, wasabi, and pickled ginger.
