Method

Preparing Sushi Rice

    Rinse the Rice

    Place sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium saucepan, combine rinsed sushi rice and 2.5 cups of water. Bring to a boil over medium heat, then reduce to low, cover, and simmer for 20 minutes. Remove from heat and let it sit covered for 10 minutes.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture using a wooden spoon. Let it cool to room temperature.

Preparing Sushi and Sashimi

    Slice the Fish

    Using a sharp knife, slice the fresh tuna and salmon into thin sashimi pieces. Aim for about 1/4 inch thickness for the best texture.

    Prepare the Vegetables

    Cut the avocado in half, remove the pit, and slice it thinly. Peel and julienne the cucumber into thin strips.

    Assemble the Sushi Rolls

    Place a sheet of nori on a bamboo sushi mat. Wet your hands and spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top. Arrange slices of tuna, salmon, avocado, and cucumber in a line across the rice. Roll the mat away from you, pressing gently to form a tight roll. Seal the edge with a little water.

    Cut the Rolls

    Using a sharp knife, slice the sushi roll into 6-8 bite-sized pieces. Wet the knife in between cuts to prevent sticking.

    Serve with Garnishes

    Plate the sushi rolls alongside sashimi slices. Serve with soy sauce, a dollop of wasabi, and pickled ginger on the side.
