Method

Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed sushi rice and 2.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until the water is absorbed.

    Season the Rice

    In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow it to cool to room temperature.

Prepare Sushi Fillings

    Slice the Fillings

    Thinly slice the fresh salmon and tuna into strips. Cut the cucumber and avocado into thin sticks. Set all the fillings aside.

    Prepare Cream Cheese

    Soften the cream cheese if necessary, and cut it into thin strips for easy rolling.

Assemble Sushi Rolls

    Lay Out Nori

    Place a sheet of nori on a bamboo sushi mat, shiny side down.

    With wet hands, spread a thin layer of sushi rice over the nori, leaving about an inch at the top edge bare.

    Arrange strips of salmon, tuna, cucumber, avocado, and cream cheese horizontally across the center of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying light pressure to keep the roll tight. Seal the edge of the nori with a little water.

    Slice the Rolls

    Using a sharp knife, slice the sushi roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.

Serve

    Arrange the sliced sushi on a platter. Sprinkle with sesame seeds and serve with soy sauce, wasabi, and pickled ginger on the side.
