Heat Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the temperature by dropping a small amount of batter into the oil; it should sizzle immediately.

Dip the shrimp and vegetables into the tempura batter, allowing excess batter to drip off. Carefully place them into the hot oil, frying in batches to avoid overcrowding. Fry until they are golden and crispy, about 2-3 minutes per side.

Remove the tempura from the oil using a slotted spoon and drain on paper towels. Keep warm while you fry the remaining batches.

Mix Sauce Ingredients
In a small bowl, combine the soy sauce, mirin, and dashi stock. Stir well and set aside.
