Prepare Sushi Rice

    Rinse and Cook Rice

    Rinse 2 cups of sushi rice under cold water until the water runs clear. In a rice cooker or pot, combine the rinsed rice and 2.5 cups of water. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.

    Season Rice

    Once the rice is cooked, transfer it to a large bowl. In a small bowl, mix together 1 tablespoon rice vinegar, 1 tablespoon sugar, and 0.5 teaspoon salt until dissolved. Pour this mixture over the warm rice and gently fold with a spatula until well combined. Allow the rice to cool to room temperature before using.

    Slice Vegetables

    Thinly slice the avocado and cucumber. Set aside.

    If using cooked shrimp, peel and devein them if necessary. Set aside.

    Soften the cream cheese slightly to make it easier to spread. You can microwave it for about 10-15 seconds if needed.

    Lay Nori Sheets

    Place a sheet of nori on a bamboo sushi mat or a clean surface, shiny side down.

    Wet your hands to prevent sticking and take a handful of sushi rice (about 1/2 cup). Spread it evenly over the nori, leaving about 1 inch at the top edge.

    Lay a line of shrimp, avocado slices, cucumber slices, and a line of cream cheese in the center of the rice-covered nori.

    Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly. Once rolled, use a sharp knife to slice the roll into bite-sized pieces.
