In a medium bowl, combine soy sauce, mirin, sake, sugar, and sesame oil. Whisk together until the sugar is fully dissolved.

Set the sauce aside to let the flavors meld while you prepare the chicken.
Prepare the Chicken

Marinate the Chicken
Place the boneless chicken thighs in a large resealable bag. Pour half of the prepared sauce over the chicken, seal the bag, and refrigerate for at least 30 minutes.

Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
